Possible Clues:

• Sweetbread or tripe, eg
• Rotten, almost entirely inedible meat
• Animal entrails etc
• Organs are not working with extra pedal ultimately
• Some scoff a liverwurst, or other meat products
• Part of roof falling reveals the innards
• Refuse facility ultimately lacking in Irish county
• Old king left some of the food offered by butcher?
• Wrong call, periodically retracted, is rubbish
• Meat product not fresh? Not quite entirely
